Q: What kind of fruits and vegetables would you use this on?

I use for slicing meats such as brisket.

Q: Where is it made? Does it hold an edge well?

It was made in China, but so far I have been very impressed with the quality, as well as the sharp edge. I have used it primarily for meat I cook on my smoker and the Thanksgiving turkey. So far the knife seems to hold its edge well and I have not yet had to sharpen it. I definitely recommend it as a very good buy.

Q: Is blade 10” or 11”? Title says 11, but description says 10.

The blade on mine is 11 in long.

Q: I've seen comments this knife is made in Japan. Does this knife have a 15 or 20 degree edge?

It’s 15 degrees. It can be sharpened using a electrical diamond knife sharpener. One on Amazon works very well.
