If you are using about 2 Tbsp per cupcake, you should be able to frost about 36-40 cupcakes

Q: Will this cover a rainbow cake with six thin layers?

We used it for a 2-layer cake and there was no left-over. Now, I did not go thin, but neither thick. 6 layers, even thin, would be quite a stretch and probably not doable.

Q: What butter should i use? salted/unsalted? particular brand recommendation?

As a baker SALTED butter is best, to give balance to the overly sweet frosting, just as it does to most sweet recipes (same reason they suggest "a pinch of salt" on the ingredient lists of sweets/baking recipes)
