Can i use to sharpen damascus steel knives like a japanese shun knife, for example? i hate using a whet stone!

Japanese knives are designed to be sharpened using a water (not oil) whetstone. I wouldn't care to experiment with the AnySharp, but see the YouTube demonstration.

Has anyone used it to sharpen metzaluna blades?

it will work if your blade has a 20° angle. if you don't know or can't find out, you might want to consider our X-Blade model instead - it works for blade angles between 12° - 23°

Can you bring it through airport security?

I'm sure you can. It does not have any sharp parts or blades larger than 3cm.
