Onuva's Pregel food starch used as thickening, texturing and stabilizing agent in cream fillings, canned, sauces, soup mixes, gravies, tomato ketchup, pasty creams, dairy desserts and other food product industries.The pre-gelatinization process provides the ability to form cold gel for native and/or modified starches. Thus, these starches provide products with viscosity without the need for cooking or high temperatures, which means that the food manufacturer does not need to precook the starch. Pregel maize starch is a cold water soluble starch and has a moderate solubility. It has such characteristics like soluble in cold water, strong water absorption and high viscosity. Pregel starch is a food additive used as a thickener and a gelling agent in foods such as puddings, pie fillings, gelatins, and cheesecake. It is made from corn or potato starch using a chemical process that causes the starch ranules to swell and burst. Pregel starch is a processed carbohydrate, used as a texturizer and/or binder. It is typically derived from corn, waxy corn, potato, or tapioca. It has nothing to do with gelatin. It is safe for vegetarians and vegans. Characteristics observed were physical, chemical and functional characteristics of pregelatinized starch. Physical characteristics are bulk density, tapped density, cold water soluble, whiteness, and birefringence.
