In the beginning, each coconut tree is tapped in a manner that produces a nutrient-rich "sap" that flows from the tree for 20 years – now that is holistic. This sap has a very low glycemic rating (GI of only 35). The sap is nutrient-rich and is an exceedingly abundant source of minerals - 17 amino acids, vitamin C, broad-spectrum B vitamins, and has a nearly neutral pH.
