Best Gluten Free Ever!
I grew up eating crumb buns from bakeries in NJ. For the past 8 years I have been searching for a gluten free product / recipe that could replicate that taste. Viddie’s gf Mostly Crumb Cake has finally met the mark. Best gluten free product ever!

My favorite part of coffee cake is the crumbs! I love the abundance of crumb ratio to cake. It is so tasty and simple to prepare. I am not gluten intolerant so I could use any recipe but I will be using viddie's.

I made these for friends that are gluten-free, dairy free, egg free. So I used ripple milk and golden flaxseed is the egg replacement. They still turned out really good. Only problem is they have way too much crumb topping. A lot of it falls off.

This mix makes the most delicious crumb cake! Definitely more crumbs than cake, which is how it should be. So easy to make and everyone loves it!

Meh. Good for being gluten free, but would not buy again.
This crumb cake mix comes in two servings, you you can do half or whole. We decided to make the whole thing, which takes a 9"x13" cake pan.The directions say to line the pan with parchment paper. I found that odd, since this package takes an enormous amount of butter - 3.5 sticks! That is a lot of butter for a pretty small cake.I got the batter ready, pressed it in the pan, and realized I had totally blanked in adding the milk. So, took the batter, which was more like shortbread batter, back out and added the milk. It looked more like batter then.The topping mix had rock-hard parts that we could not break apart and had to toss them. No cracking a tooth! I mixed some in with the cake as well, because it needed a little flavor.The ingredients. Not an improvement over ANYthing except gluten.Brown sugar, sugar,white rice flour, brown rice flour, tapioca starch, corn starch, potato starch, cinnamon, xanthan gum, sakt, baking powder, potato flour, pure vanilla powder, dextrose, baking soda, cream of tartar, pectin (!?), lemon freeze dried fruit powder.Making both packets says it makes 32 servings. From a 9x13 pan. 32. Uh-huh. Everyone gets a spoonful? And each one of the 32 servings has 36 grams of carb, or more than a whole days' worth!So, we used a dark 9x13 cake pan. The directions said 60-65 minutes at 325°. We only did about 45 and it was plenty done. If we had done the full hour, it would have been all dried up or burnt on the bottom.The taste: taste is very subjective. I do not have to be gluten free, so this was just to try out this crumb cake. I ended up mixing some of the massive amount of struesel topping in with the batter, so had a cinnamon cake with struesel topping. I was a bit surprised by how dry the cake is, given how much butter it takes (1.5 sticks for a small amount of cake). The flavor is just fine, similar to a spice cake. If I had to do this one again, I would ADD a 1/2 teaspoon of nutmeg and 1/8 or so of ground cloves to it to perk it up. Maybe even a teaspoon of apple pie spice mix. It isn't quite coffee cake, not quite regular cake, just "there".If you do not have to be gluten free, then I would suggest just making your own favorite coffee cake recipe.If you DO need gluten free, this is an acceptable dessert or coffee cake, just add some more spice to the batter. It needs help.

Too much crumb
They aren't kidding when they say this is a mostly crumb cake. I can't really find the cake when eating it...and it's hard to tell if the cake is done cooking with so much streusel topping (my first cake was not fully baked, even though I thought it was). This is basically coffee cake without the cake part...just the topping. It's a lot of butter and sugar, and that's pretty much all you taste. You need to add 1 3/4 sticks of butter per cake. It's too sweet. It's the first cake my kids have refused to finish eating. Its incredibly hard to serve and to eat as it's so crumbly. I added tart apples to the second batch, and it was better, though still overly sweet. There's enough mix to make 2 8x8 cakes in a box. Maybe it's just this kid of cake I don't like, rather than the mix itself, but I was not a fan.

Mostly Crumb
This is mostly crumb as the name on the packages states. If the crumb is your favorite part of a crumb cake, then this is your style. It is quite sweet – there is a lot of sugar in this box. But it tastes pretty good. I like crumb but I would like a bit more cake – it’s a bit much – kind of like eating candy.
