The nutritious fine white powder is extracted from Weber Blue Agave Tequilana by cooking the agave piñas for between 10-15 hours at a low heat to preserve the inulin. The agave then goes through multiple passes in a liquid extraction chamber to squash out the agave juice which now contains the desired long chain agave fructans. This juice is then collected and dried to give a minimum of 90% inulin powder with average DP (degree of polymerisation) of 18 +/-3.
