Xanthan Gum is a polysaccharide produced as a result of fermentation. The fermented solution is dried and milled into powder. It is a natural thickening agent and is used in dips, sauces, condiments, baking, glazing and also to make cocktails since it maintains liquid viscosity. It can be used as an emulsifier and as an excellent binding agent in gluten free baking. It can also be used in ice creams to prevent formation of ice crystals. Store in an air tight container and a cool dry place.
