The Crimson Series 7-inch Nakiri knife features Ergo Chef's patented design for proven comfort and less strain. The Ergo Chef handle is custom crafted from G10 fiberglass composite material for superior durability that surpasses all other plastic composites. The Nakiri knife is a thinner blade Japanese-style vegetable knife whose name's literal translation is knife for cutting greens. This knife is shaped with a slight curve of the blade for a rocking cut or downward motion cut traditional to this style knife. The straight edge blade is suitable for cutting all the way down to the cutting board without the need for a horizontal push or pull. Blades are made from a single piece of high-carbon, German stainless steel (X50CrMoV15) and have a polished finish for stain resistance and thin cuts. Blade edge is ground to a razor-sharp 18-degrees. Hand wash with warm soapy water and dry immediately. The Ergo Chef line is the brainchild of a Johnson and Wales trained chef. The chef was sidelined with painful tendonitis and carpal tunnel syndrome and was desperate to find knives and tools that would eliminate hand and wrist pain. The chef turned inventor enlisted the help of his engineer brother. They worked with designers at the family machining company to examine how a conventional knife fits in a chef's hand, the movement of the chef's wrist and hand during chopping and the angle at which the knife hits the cutting board. The innovative design that was eventually developed took stress off the wrist and hand. After only a few weeks the chef's tendonitis disappeared. Countless prototypes were sent to professional chefs, students and culinary professors across the country. The enthusiastic and positive response gave birth to the Ergo Chef brand.
