Boiling water scorches it and you lose all the sweet tart notes this one has going for it. Bloom it. Pour just enough water to wet the grounds, wait 30 seconds while it puffs up, then pour the rest slowly in circles. That little pause is the difference between "fine" and "oh, that's nice." Store the bag somewhere cool and dark, sealed up. Not the freezer, not on top of the machine. Do all that and this $7 bag will beat most $5 coffee shop cups. This coffee is just okay. I know that some people swear by it but coffee is one of those things where you can be very very particular about it.
